Remarkable Rhubarb
Rhubarb is pretty impressive nutritionally. One cup of diced rhubarb has 26 calories, 6 grams of carbs, 2 grams fiber, 9.8 mg Vitamin C (16% DV), 105 mg Calcium (10% DV) and 351 mg Potassium (10% DV). Unfortunately it seems to be at its best when loaded down with sugar. I'm still looking for savory rhubarb recipes. I just came across "The Rhubarb Compendium" which is filled with recipes and information. I am especially interested in trying this page of recipes. The Pork with Rhubarb sauce sounds interesting. I will have to try a few of the recipes and report back on the results. I just have to save enough for a batch of rhubarb wine. I may well go from wondering what I'm going to do with all the rhubarb to wishing I had more to experiment with.

I love Rhubarb! I didn't realize it had such a generous amount of Vitamin C.
I bought a large plant this year, but it is still sitting in a pot waiting for our new garden spot to be ready.
Those recipes look quite interesting. The Norwegian one has to be good. (right Dave?)
I found it intriguing that several recipes paired Rhubarb with Lamb. Lamb is one of our favorite meats...I always cook it with lots of garlic and rosemary.

I just planted two rhubarb plants this year. It will be a while until I get much rhubarb, but I can't wait. Interesting recipes, can't wait for the report.
We are getting a good harvest from transplants we put in last year. I'm sure it won't be enough for all we want to try either. I have to keep some around for the strawberry harvest!
It is interesting how so many of our plants are very healthy (without a lot of added sugar). The Compendium is one place I came across trying to find some recipes. Pork kind of makes sense as a pairing - might try that one too.
